Banana Jamming












Ingredients

2 lbs ripe bananas, 1/4 Cup dried currants, 1/2 Cup Walnut pieces
3 1/4 Cup brown sugar
1/3  Cup Honey
1 1/3 Cup water
juice of 3 limes
1 teaspoon cinnamon
3 tablespoons of pure vanilla extract (or use real vanilla beans)

  • Peel and mash the bananas.
  • Combine water, lime juice, sugar, cinnamon, vanilla, and honey over moderate heat and stir until syrup thickens.
  • Add the mashed bananas, currants, and walnuts let cook 30 to 35 minutes, stirring occasionally.
  • Ladle in hot syrup in to pear packed jars
  •  Immediately fill hot pint jars with mixture leaving 1/2" head space.
  •  Remove trapped air bubbles.
  •  Wipe jar then adjust two piece caps.
  •  Process jars in boiling water canner for 10 minutes.

Disaronno Almond Pears



 
 
 
 

Ingredients

7 pounds pears halved, peeled, and pitted

4 cups water

2 cups sugar

1/2 cup Disaronno liqueur

1/2 cup Pear schnapps

1/2 cup blanched almonds

  •  Pack hot jars with pear halves.
  • Combine water and sugar heat until sugar is fully dissolved
  • Remove from heat allow to sit for 10 minutes
  • Add almonds and Liqueurs
  • Ladle in hot syrup in to pear packed jars
  •  Immediately fill hot pint jars with mixture leaving 1/2" head space.
  •  Remove trapped air bubbles.
  •  Wipe jar then adjust two piece caps.
  •  Process jars in boiling water canner for 20 minutes.
